Ingredients

500g Lion’s Mane mushroom mince

3/4 cup panko breadcrumbs (add more if mixture is too wet)

1 medium onion, finely chopped

3 cloves garlic, minced

1 1/2 tsp ground cumin

1 1/2 tsp ground coriander
-
3/4 tsp smoked paprika
-
1/2 tsp chili flakes (optional)
-
3 tbsp chopped fresh parsley or cilantro

Salt and black pepper, to taste

3–4 tbsp oil, for frying
Optional Dipping Sauce:

200g vegan yogurt
-
1 1/2 tsp lemon juice
-
1/2 tsp ground cumin
-
Salt to taste
Instructions

Mix the Kofta
In a large bowl, combine the Lion’s Mane mince, panko, onion, garlic, spices, herbs, salt, and pepper. Mix until it holds together. Add extra panko if too wet. -
Form the Kofta
Shape into 8–10 medium-sized kofta (roughly 50–60g each). -
Cook
Heat oil in a large pan over medium heat. Fry kofta 4–5 minutes per side until golden and crisp. Drain on paper towels. -
Optional Sauce
Mix yogurt with lemon juice, cumin, and salt. Serve alongside kofta for dipping. -
