Smoky Lion’s Mane Steak with Garlic Herb Butter and Roasted Veggies
This recipe celebrates the rich, meaty texture of our smoked Lion’s Mane steaks, paired with seasonal roasted vegetables and a garlic herb butter. Ingredients (serves 2)
For the steaks:

2 Lion’s Mane smoked steaks

1 tbsp olive oil
For the roasted veggies:

1 small butternut squash, cubed

1 red bell pepper, sliced
-
1 small red onion, cut into wedges
-
1 tbsp olive oil
-
Salt & pepper, to taste
-
1 tsp smoked paprika
For the garlic herb butter:
-
50g vegan butter or plant-based spread
-
2 cloves garlic, minced
-
1 tsp fresh thyme, chopped
-
1 tsp fresh rosemary, chopped
-
Pinch of smoked salt
Optional garnish:
-
Fresh parsley, chopped

Lemon wedges
Method

Preheat your oven to 180°C (fan).

Prepare the roasted vegetables:

Toss all vegetables with olive oil, salt, pepper, and smoked paprika.

Spread evenly on a baking tray and roast in the oven for 20–25 minutes, until tender and slightly caramelized.

Cook the Lion’s Mane steaks:

Heat 1 tbsp olive oil in a frying pan over medium-high heat.

Sear each side of the steaks for 2–3 minutes until golden brown.

Transfer to the oven at 180°C (fan) for 7 minutes. Cook from chilled for best results.

Make the garlic herb butter:

While the steaks and veggies cook, melt the vegan butter in a small pan.

Add minced garlic, thyme, rosemary, and smoked salt. Cook gently for 1–2 minutes until fragrant.

Serve:
-
Place roasted vegetables on the plate.

Slice or serve the Lion’s Mane steaks whole on top.

Drizzle with garlic herb butter and sprinkle with fresh parsley.

Add a squeeze of lemon if desired.
